Vegan Cauliflower and green pea curry
Cauliflower and green pea curry with coconut cream and cinnamon apple sauce:
- 450 g cauliflower
- 200 g of green peas
- 1 dl purified water
- 2 tbsp coconut oil
- 1 tsp mustard seeds
- 1 tsp turmeric
- ½ tsp madras curry
- 1 tsp coriander seeds
- top with coconut chips and sliced almonds
Tear the cauliflower roses apart and wash.
Pop the mustard seeds and fry with the rest of the spices in coconut oil. Add the cauliflower and cook for 10-15 minutes, toss it around to brown it, then add the water and simmer until tender. In the last 5 minutes, add the green peas and sauté with the cauliflower.
Serve with rice and the apple sauce.
Coconut cream apple sauce with cinnamon:
- 200 g coconut cream or coconut milk in a metal can
- 0,5 dl purified water
- 2 medium apples
- ½ tsp cinnamon
Core and slice the apples and pour the coconut cream (or metal can coconut milk) into the ArtMix Pro container with the cinnamon, then cook on the hot sauce programme for 10 minutes. Once the 10 minutes is up, stop the program and your sauce is ready. Pour over the fresh curry, serve with rice and enjoy the delicious flavors!
